Cheese Steak Salad

I know this is obvious, but you can turn any of your favorite sandwiches into a salad. It makes it much it lower in carbs, and much better for anyone diabetic, or insulin resistant.

I sauteed the onions, peppers, and mushrooms in one pan.

In the second pan I fried the shaved steak. As soon as I flipped the steak, I turned off the pan, and added a slice of cheese. 

I used baby Romaine lettuce, and ranch dressing. 

It was delicious! Not missing the bread at all.

I thought it was amazing. In my opinion, it allows the conscious mind, to communicate with the subconscious mind, to change the old programming, and decide what you want the new programming to be. 

I’ve been working with the process myself, and one of the recent programs I found was about ‘being full of myself’. I heard the phrases, “She is do full of herself”, and “Oh, she just thinks she is all that.” Nothing I ever heard about me, but things I heard as a child. If my subconscious mind is holding this idea/belief, how can allow myself to be to successful? I would become to full of myself. 

I have big ideas! I need to be full of myself!

New idea/belief…Full of myself = Full of my own energy, full of my authenticity, grounded in my own adult beliefs.

Christine Texiera jokes that I have a masters in woo woo, so in the next few weeks I’m going to write a blog about all of my many training, and experiences that added to my masters in woo woo.

Good for diabetes, strawberry shortcake

This recipe for biscuits from http://glutenfreehomemaker.com/coconut-flour-biscuits/ is not only gluten free, it is also high in protein, and low in carbs. The Greek yogurt adds more protein. I really like the plain Cabot Greek yogurt.

For a diabetic, the protein slows down the intake of carbs, and the reduces the spike in blood sugar after eating. For someone with insulin resistance, the protein prevents the insulin spike. Either way it helps to stabilize the blood sugar.

Low carb for a diabetic, week 2

At the start of week 2, I lost about 5 pounds, my blood sugar is the best I’ve ever seen it, and I’m learning to adjust some things.

This is my coffee. I learned that I don’t really like heavy cream in my coffee, and whole milk in my coffee, is where I want to put my carbs. I also notice that if I add cinnamon, I can cut down on the Stevia, just 3 drops. Cinnamon helps to stabilize blood sugar, as well as being very tasty. I put the cinnamon in before frothing the milk, it blends it right in, instead of sitting in clumps on the top.

Yesterday my son Nathan made a cake for his stepmother’s birthday. He cut the top off the cake to frost it. It reminded me of mother, who baked cakes to sell. As a child it was treat to get those little pieces of cake. I ate a few bites of the cake. It tasted WAY to sweet to me. My taste buds are getting used to less sweet. I threw the rest in the trash. It was still just a little warm. As I was throwing it in the trash, I knew I was committed to doing things differently. It felt really good.

Curry Chicken Salad, with Broccoli Slaw

If you put some effort into eating low carb, it can be very good food! I buy organic rotisserie chicken. This time I used some of the breast meat for Chicken Ceasar Salad, with homemade dressing, capers, and olives. No croutons.

Second dish, curry chicken salad. I pulled the chicken off the bones, and put it in the food processor with celery (onion would also be an option, or scallions would even be better!), add mayo, and curry powder. I topped it with fresh sprouts (I sprout them…another blog).

The salad is also my recipe. I use broccoli slaw. The dressing is mayo, cider vinegar, and a sprinkle coconut sugar. I book bacon, and then chopped onion in the bacon fat. That gets added to the slaw, and then I topped it off with pumpkin seeds, sunflower seeds, and sliced almonds. Image

Low Carb Eating, and Diabetes

I started taking Amino Acids a few weeks ago, in an attempt to feel better more consistently. In these changing times, I get very high mood highs, and when the shadow shows up, it feels pretty awful in contrast!

The very first thing I noticed, was my blood sugar dropping. After a week of chasing lows, which means eating quick carbs, I felt fat! I slowly decreased my basil rate, which is the rate of insulin being given throughout the day. I went from a total 14 units per day, to a total of 12. Pretty good right?

Now to get rid of this extra belly. I started eating very low carb, and notice two big things.

First, a massive headache! Because of the extra sugar always in my blood, I have a problem with yeast. I’m sure I’m going through die off. Added extra Probiotics, starting drinking more water.

Second, and this is the exciting part, I went from taking a total of 45-55 units of Insulin a day, (basil and bolus combines) to 16-17 units! My blood sugar normally goes up after eating, until the Bolus for the food intake has time to work. It is why Diabetics wait 2 hours after eating to check. I’m barely taking any Boluses, and not getting the spike after eating. My blood sugar is almost normal, all the time.

There are carbs I really enjoy, and the thought of giving them up entirely is sad, however I have to ask myself if it would be worth the benefits of less Insulin, less yeast growth, and over all Imagestable blood sugar.

Wouldn’t it be cool if? The Law of Attraction/ The Vacuum Story

V 008As most of you know me, you know I like to tell stories to create change.

Since the subconscious mind does not know the difference between imagination, and reality….., making up stories that…. you’d love to imagine….focusing in the direction…. you want to hold your attention….., creates the energy…. you need to be presently in,…. to create it now, now, now.

When I was first understanding this…..I must have known….on some level…how to do this.

I had an Electrolux Canister Vacuum when I was married.

I bought a few vacuums, and hated them, so I brought them back. Then I bought a few sweepers, and hated those.
I thought….I want an Electrolux Vacuum, and I want someone to give it to me.

(By the way…Electrolux, kicks Hoovers ass.)

A couples of weeks later…..I was at a friend’s house. Her housemate had just passed away. She said, “There is bunch of stuff downstairs. The family said give it all away. See if there is anything you want.”

I was with my two friends, who wanted to look. I didn’t, but had to wait for them anyway. I went downstairs. At the bottom of the stairs, was an Electrolux Vacuum. I got very excited!!! Me, “Can I have this?!”
Kristen, “Yes, and there are attachments, and bags over here.”

Just to be clear. This all really happened. You can make up Shit this good.

So be a conspirator. Conspire on behalf of the Universe/God. Allow the Greatest good….for the most…. that it is part of …..benefit.
